Reviewed Sweet Couscous with Nuts and Dried Fruit
"One for the recipe box. I know my pantry is properly stocked when I happen to have all ingredients on hand. Subb'ed mango for apricots and used whole wheat couscous and organic pure cane sugar. It is sweet, but it tells you that in the name. I think the olive oil drizzle not only helps with moisture but also helps temper the sweetness a little. It""
Reviewed Oven-Roasted Cod Crusted with Herbs
"God for its simplicity. I don't think parley adds much to any food so I used cilantro, which was a natural complement to the lemon anyway. I used cusk fish, a cousin of cod and had to cook 5 min longer. I agree with someone else who said the breadcrumb mixture was a bit much, but I used wheat germ so not as big a loss as if I'd used panko ;-)""
Reviewed Kale with Garlic, Anchovies and Ale
"I love anchovies and garlic, so I had high hopes. Unfortunately, it was not as good as I hoped and I made it exactly as indicated. About Me
I've never been much of a cook but have slowly been inspired by cooking shows and some great books to try new techniques and flavor combinations.
I'm a vegetarian who had gotten fairly creative but still work better with a recipe. Now I'm married to an omnivore and really feel lost because I have no idea about cuts of meat, cooking times, etc. I
Fortunately, he's a veggie eater though so I usually try to find ways to make meatless meals the star and just add enough meat on the side to satisfy his needs.
Favorite Foods
I tend to love making soups the most and it shows because those are almost always my best meals. I also make a pretty mean meatless chili.
When eating out if it's pasta with a creamy sauce or mexican and cheesy I'm happy--if not healthy .
I buy as much organic as possible, especially produce (availability & budget willing) but obviously have to throw that out the window when dining out.
