Reviewed "Mock" Garlic Mashed Potatoes

I followed the advice of one reviewer and quickly blotted the cooked cauliflower until the florets were really dry. I think this made all the difference with the texture. It turned out as creamy as my mashed potatoes. Because I don't eat dairy, I added a small stream of EVOO as I was pulsing the mash instead of the two cheeses. I love garlic, s"
