"As other reviewers have noted, this recipe makes an absolutely delicious risotto every time! I substitute parsley for the mint but otherwise follow Rachael's instructions exactly. Freshly grated cheese is a must! I love to serve this with roasted halibut and steamed asparagus, letting the risotto be the star. Thank you Rachael for another winner!""

"As written, I found this dip lacking in flavor. After my first attempt, I began adding 1/2 tsp. each of onion and garlic powder, along with two finely chopped green onions, a small handful of parsley, chopped, and 4-5 fresh basil leaves, finely chopped. I also omit the bacon - I didn't find that it added any real flavor. I also skip making my own pita chips and purchase them from the store. I have found that the garlic and herb pita chips add even more wonderful flavor. With these modifications, this has become my go to dip! Everyone always enjoys it and I can whip it up in minutes.

"This is a simple, light and very tasty recipe. I have made it several times now, following the recipe exactly, and was met with praise from even picky eaters who do not like fish! This is easy to make for a group too - the recipe doubles beautifully. I pair this with cooked orzo and mix it with lemon zest, olive oil, parsley, mint (to mimic the flavors in the pea salad), salt and pepper, along with a simple spinach salad. It has been a hit every time!

Reviewed "Super-Tuscan" White Bean Soup
"Thank you, Michael Chiarello! This soup is flavorful and rich without being heavy. I used an immersion blender instead to make the soup smooth and it turned out fantastic. I look forward to making this again - this is an impressive meal to serve for guests or to cozy up with at home on a chilly night.
