I am always on a search for a more excellent meatball recipe and this one goes to the front of the line. My only tweaking was extra garlic, about 1/2 tsp of crushed red (not sure what Anne considers to be a pinch, and I used homemade panko breadcrumbs. The sauce was a bit bland, so I added some heat (extra crushed red and about 1 tsp sriracha. ""

This was a very good standard meatloaf recipe. The end result was moist and flavorful (even without the sauce, which I did not make). I substituted homemade multigrain crumbs (leftover Super Bowl hotdog buns) and added 4 cloves of minced garlic to the onion/celery saute. I believe the patting out of the meat and then PUNCHING (?) is totally unnecessary....

It took a little effort to get the guanciale, but was worth it. It seems to have a more mellow flavor than pancetta. FYI: For those of you in the Ann Arbor, Michigan area, Zingerman's mail order (888-636-8162) carries guanciale! You can avoid the shipping cost by picking it up yourself.

I do HATE that word, but I loved this pasta dish. I used 2 large bunches rainbow swiss chard for the greens (could use more if like higher proportion of greens to pasta, extra few garlic cloves, and three large chopped shallots sauteed prior to adding the anchovies . I also used angel hair pasta. Nice as a main dish with a glass of chardonnay....
