My Activity

Reviewed Chicken Piccata with Lemon, Capers and Artichoke Hearts

"This was amazing! My family loved it! Very simple to prepare. After reading the reviews that it was too lemony, I increased the wine to 3/4 c. and the broth to 3/4 c. which was just the right lemon flavor, as well as providing lots of scrumptious sauce for the rice. I also left out the lima beans from the rice. I will definitely make this again...""

Reviewed French Quarter Beignets

"Outstanding, the recipe makes tons, so I halfed it. Easy to make, great for a party, I'm making them for Christams Eve again. We dipped the beignets in seedless raspberry jam or nutella, everyone loved it!""

Reviewed Wayne's Beef Macaroni and Cheese

"This was very good, easy and delicious! I substituted red peppers instead of green peppers due to my husband's preference. Served with garlic bread and a salad."

Reviewed Stuffed Chicken Divan with a Sherry Dijon Sauce

"This was excellent, I thought all the stuffing would fall out when I flipped the chicken in the frying pan, but it didn't! I thought the sauce was a little thin, so I added another teaspoon of cornstarch. I cooked the chicken at medium heat and did not have any problems with it burning at that temperature. I served it with jasmine rice and the sauce was good poured over the rice!"

Reviewed Chicken Teriyaki with Ginger Rice

"Even my son who is a picky eater liked this teriyaki...I did double the sugar, because I know we like a sweeter glaze, and went easy on the ginger. Had great flavor, the rice came out perfect and very fragrant. I made shish kabobs with steak and the marinade was great on that as well as for chicken. A really tasty meal.

Reviewed Beef Stew

"The seasoning on this stew was wonderful, my family loved it! I did chop items up smaller because of my family's preferences, so I did not have trouble with the meat cooking up and being tender, as it was in smaller pieces. I used 1 Tbsp. dried thyme and minced the parsley up instead of the sprigs the recipe called for. I also added the half cup red wine as others recommended. I think next time I will add an additional thickening agent at the end, as it was a little watery still, but an extremely flavorful broth, so good with bread to sop up the juices!

Reviewed Three Cheese Hot Artichoke Dip

"I made this for Christmas Day, and everyone downed this appetizer first! A great success!

Reviewed Fried Chicken

"I liked this recipe with the following modifications: I cut the paprika in half, and I cooked the chicken in canola oil. I also used boneless, skinless thighs and breasts and only soaked the chicken for a few hours instead of the recommended length of time. The result was very moist and flavorful, and I had no trouble with burning as was noted on some reviews. My husband loved it!
