The demi-glace I just bought at Williams Sonoma appears to be a concentrate. Luckily I said something to the sales lady about how expensive it is and that I needed 2 cups of it. I thought these had great flavor, I used roasted corn along with the smoked cheese. I am heartened to see that everybody else had such a hard time flipping these. I've tried them twice on the grill and will switch to stove top in the future. "

I thought these looked really fun but the "bowls" didn't really stay bowl shaped once they were cooked. They kind of flattened out. Anybody have any hints for keeping the shape?"
