Reviewed pan-seared tuna with avocado, soy, ginger, and lime

Jun 11, 2014 on FoodNetwork.com

Great recipe! The sauce has a great blend and balance of flavors. I crusted the tuna with sesame seeds before searing it and served on a bed of jasmine rice so the rice could absorb the sauce and it wouldn't be waste just sitting on the plate. Excellent dish!

Replied to lemon angel food cupcakes with lemon curd and mascarpone frosting

Jun 8, 2014 on FoodNetwork.com

Mascarpone cheese is a lot lighter and not tangy like creem cheese. It's used to make tiramisu. Frosting can be made using either one, it's just a personal preference on tasting the end result.

Reviewed lemon angel food cupcakes with lemon curd and mascarpone frosting

Jun 8, 2014 on FoodNetwork.com

The cupcakes turned out tasty and everyone was plesantly surprised when they took their first bite and raelized they were made out of angel food and not regular cupcake mix. The lemon curd is enough if you only use about a teaspoon and a half for each cupcake. It doesn't seem like a lot but I think any more filling would overpower the cupcakes. ...

If you don't like using boxed mixes, then you don't have to make the recipe, or you can make everything from scratch. Don't give the recipe a bad rating just because you don't like the ingredients that it calls for. That is not useful for people who are looking for a true rating of flavor. I will be making these cupcakes tomorrow to take them to...

Reviewed fusilli with sun-dried tomato vinaigrette

I should add that I used sundried tomatoes packed in oil and reduced the amount of additional olive oil.

Reviewed fusilli with sun-dried tomato vinaigrette

Great recipe! The sundried tomato vinaigrette is really good! I used spinach instead of arugula but followed the recipe otherwise.

Reviewed roasted berries

Jun 1, 2014 on FoodNetwork.com

I made the roasted berries and served them with homemade chantilly cream (sweetened whipped cream). They were absolutely delicious! I roasted a larger quantity than the recipe asks for so I doubled the amount of sugar and used vanilla extract since I didn't have vanilla bean. I checked them at 20 minutes and they looked like they could use a little...

Reviewed watermelon mojitos

May 27, 2014 on FoodNetwork.com

This is a good variation to an original mojito but I still prefer the original better. I followed the recipe as is and didn't strain the watermelon puree which I made in the blender. The liked the texture just fine.

Reviewed sugar snap peas with sesame

May 18, 2014 on FoodNetwork.com

I combined this recipe with another one that incorporates radishes and cucumbers with the snap peas and the result was awesome! Best salad I've had in a long time. The sesame oil and seeds give the salad such a great taste. The other recipe can be found here:

Replied to lemon bundt cake with chocolate glaze and candied lemon

I'm interested to hear what you thought of the pieces of candied lemon in the cake. I'd like to try the recipe but I'm hesitant to add all that candied lemon to it.

Replied to "fauxrizo" taco filling

May 12, 2014 on FoodNetwork.com

I don't think this particular slaw recipe is meant to be eaten by itself because it could use more flavor, but it does provide a great balance of flavors when eaten together with the seitan/meat filling.

Reviewed "fauxrizo" taco filling

May 12, 2014 on FoodNetwork.com

Made this recipe for Mother's Day together with the coconut black beans. I followed the recipe pretty closely and it turned out delicious! I used ground beef instead of seitan. I added all the spices except for the chile powder and the garlic powder. I didn't have either in my pantry so I chopped some garlic and cooked it with the onion and the...

Replied to coconut lime black beans

May 12, 2014 on FoodNetwork.com

You can drain the beans after they're done cooking and before preparing them. It's always better to cook beans with more liquid than not enough.

Reviewed coconut lime black beans

May 12, 2014 on FoodNetwork.com

I made these and the tacos from the same episode for Mother's Day. They turned out delicious! I didn't tell my guests ahead of time what the secret ingredient was in these beans but they all quickly wanted to know after they tasted how good and original they were. One thing I will change next time is not add coconut water to the cooking liquid because...

Reviewed heirloom tomatoes with tarragon

May 5, 2014 on FoodNetwork.com

This is my new favorite way to prepare tomatoes. The tarragon add a surprising nice fresh flavor to them.

Reviewed green beans gremolata

May 4, 2014 on FoodNetwork.com

This was a great recipe. I loved the flavor of the gremolata. I forgot to toast the pine nuts ahead of time; I realized it when I was putting it all together, so I skipped them and used a little more parmesan cheese instead. It tasted great even without the nuts.

Reviewed lobster and shells

Apr 29, 2014 on FoodNetwork.com

This salad was great. I used all the ingredients and only substituted lobster with crab (bought a 1 lb container of cooked crab meet). The entire recipe makes for a big crowd so I only made half of it and it still had enough for a few days.

Reviewed chicken marsala

Apr 28, 2014 on FoodNetwork.com

Great tasting recipe! I served it over fettucine pasta and it needed a little more sauce to keep all the past moit, so next time I will double the amount of wine and broth. The proscioutto adds a nice salty bite so don't skip it.

Reviewed wild mushroom ravioli with butter and parmesan sauce

Apr 24, 2014 on FoodNetwork.com

This recipe was delicious! Like something you order at a restaurant. And so easy! I sliced the basil leaves so they would be more evenly distributed in the sauce than adding them whole. I used a mushroom and cheese ravioli bought at Costco; I only used 1 package and made half of the recipe. The key here is to use very good quality butter and to...

Reviewed chocolate chip-cherry cast-iron cookies

Apr 15, 2014 on FoodNetwork.com

These cookies are really good! The oatmeal gives them a nice texture without overpowering the cookies. Some recipes are too heavy on oatmeal but this one isn't. The dark chocolate chips are a nice change to milk chocolate chips and give the cookies a more gourmet taste. The cherries are good too; they are tart but they cut through the sweetness....

Reviewed artichoke risotto

Apr 13, 2014 on FoodNetwork.com

Tasty? What do you think? This risotto tastes amazing! It's my new favorite risotto recipe for sure. I made it as the main course for dinner so I added some baked crumbled prosciutto to add some meat to the meal. I bought a 6 oz. container of crumbled feta cheese and ended up adding the entire container because I didn't want the remaining cheese to...

Reviewed semolina and sun-dried tomato waffle-pizzas

Apr 13, 2014 on FoodNetwork.com

This rating is mainly for the crust since the toppings can be varied according to personal preference. When I saw this episode I got so excited because I thought that I could finally make my 2-year old son a pizza crust that he could actually eat. Depending on the type of pizza you get, crusts tend to be too chewy, hard or dry for most little kids,...

Reviewed Plum Cake "Tatin"

Apr 1, 2014 on FoodNetwork.com

This cake is delicious! I couldn't find prune plums, so I bought regular red plums and sliced each one in 4, using only the inside pieces and not the ends. I was a little worried because plums are not in season yet and they were tart and not very juicy, but the caramel sauce takes care of that! The sauce soaks into the cake after turning it over...

This was a very tasty dish. I didn't put the chicken in skewers with the orange but added the chicken pieces to the noodles directly after cooking. I also added peas and carrots. I used fettucini noodles because it is what I had at hand. The noodles and sauce dried out quite a bit after the dish rested for a couple of hours. I had saved some...
