Reviewed yellow squash casserole

I have made this recipe many times now and am always happy. I have shared it many times with friends. I steam my squash vs boiling, I think it keeps more of the squash flavor.

We were very pleased with this recipe. I was happy with my short cut. If lacking time to make the tomatillo sauce my grocery store had Arriba fire roasted mexican green salsa which worked wonderfully. Only change to recipe I would highly recommend is heat the enchiladas through for about 15 minutes at 350 then brush with oil and place under the broiler...
