This soup is delicious!! I used fat free half and half instead of cream and it turned out wonderfully. I also used my immersion blender to puree and the consistency was velvety. I needed to add some salt and pepper, to taste. Highly recommend!""

Since we are not huge meat eaters, I omitted the sausage and increased the ground chuck to about 2 pounds. I also added about 1/3 cup red wine to the sauce and made it and the cheese mixture about 3 days in advance, leaving the beaten eggs out of the cheese mixture until right before assembly. I allowed both to come to room temp before assembling....
