I liked this recipe - especially I liked making it as a one dish meal. I added 3 cups of water, a Knorr bullion cube, and a cup of rice. I LOVE cumin seeds in rice - I make it often and am hooked on it! So it inspired me to add rice. I don't think it tasted overly "Indian", but I thought it tasted very good, and especially, loved how easy it was....

LOVED IT! I had no fresh herbs, so used dry (thyme/oregano). Lots of them, so the oil/herbs/garlic were almost a paste. I rubbed that inside, outside and under the skin. Then I melted some butter and added the herbs/garlic to it and rubbed that all over the veggies. They both came out perfect! And it was easy and worth the smokey kitchen! R"

I had fun playing with this recipe. Great sauce to it - I added a bit extra lemon and zest. It added moisure without being too "vinegar-ey". I had a small japanese eggplant, so I sauteed that with some oil and garlic and at the end a splash of balsamic. Put that aside to see if I liked it on top of the salad, and did, so mixed it in.
