Excellent!! I used the mini muffins (baked for 22 mins) & my kids couldn't stop eating them. Light, moist (without overmixing) and really easy to make. If you like it less sweeter, lessen the sugar measurement. I used 1 1/4 c sugar. It was really wonderful with coffee on a cold afternoon.
