This was pretty fantastic! I sliced the potatoes myself- I actually found that the little partial slices that I accidentally cut when I was trying to slice really thinly worked nicely for covering the edges of the tilapia. These were a HIT at the school where I work! These were easy to make and delicious to eat. I substituted the 1/3 less fat cream cheese for regular and they were still just as tasty. I would definitely make these again."

I have an intolerance for garlic, so I was ecstatic to see a babaganoush recipe that didn't call for it. This was wonderful! I've savored every bite. I bought Stacy's mutigrain pita chips to go with it, and the flavors in the chips and the babaganoush complemented each other nicely."
