The 5 eggs is the baking agent. Baking powder or baking soda is not needed. :o)

Absolutely FABULOUS!! Made it several times with different fillings. Best one was using lemon curd. Also added some lemon rind in the dough. Very refreshing and made it less sweeter tasting. Bravo Ree! Love ya!

GREAT taste........... just the right tartness, but too runny. I tweaked and added a one half cup of corn startch instead of a third cup and that fixed the dilemma of the soup-like- consistency. Also letting it sit for 24 hours made the flavors mare and allowed the filling to rest.""

The key to success of this recipe, in my opinion is to first make sure when cooking the pumpkin mixture is very DRY. Only add half the amount of cream specified and reduce the liquor by half as well.
Add more spice amount, to taste. It will not be so be wet and will h...ave a better, tasty end result. BUON APPETITO!

I agree with garbiedog........omit the cocoanut, add more chocolate. I personally used one frozen rasberry with semi-sweet chocolate for each "purse". Oh my! Bellisima! I am making these at Christmas-time. It makes for a very elegant presentation.""

If the peaches are not sweet enough, you have to add more sugar, which makes the cobbler more "runny". To prevent this, add one tablespoon cornstartch to the water and sugar mixture when you are cooking tne filling. ""
