Reviewed rhubarb custard pie

Jun 2, 2014 on FoodNetwork.com

So easy! Family loved it! I baked the pricked pie shell (no foil, no pie weights) for only 10 minutes or so until lightly browned, put in the rhubarb mixture, poured the cream mixture, and baked as directed. Perfect!

An easy pie to assemble, and Betty Crocker pre-rolled pie shell made it quick. I used fresh-frozen peaches from last summer after draining them and fresh-frozen blueberries. The 1/4 sugar was perfect - not too sweet and was especially good with ice cream. I did add a scant touch of cinnamon to the fruit mixture before putting it into the pie shell.

Delicious! And so easy! Reading the other reviews helped. I used only half the ham required if that much; you can control how much you put on. Good, but no "Wow!" Probably too close to the recipe we've used for years. One person said to use sweet pickle relish and skip the sugar."

Made these for my husband on the spur of the moment with what we had on hand and with some modifications: regular bread, unbuttered, from the toaster; Jimmy Dean microwave turkey sausage patties; scrambled eggs; Kraft American cheese singles. Even with these changes, he loved them! Great idea for a quick breakfast!""
