"We loved it. The first time I made it I overcooked it and didn't let it sit in the marinade after it was done so it didn't come out too good. Tried it again and it came out perfect. "I only had zucchini, sweet onion and green pepper, so I just used what I had. The dressing gave it a good flavor. What's good about the dressing is you can just use it on any kind of grilled vegetable that you have. I grilled mine on the grill. Next time I am going to cook this recipe with rice to put the vegetable over it."

"Loved this recipe. Great flavors with the lemon, spinach and toasted pine nuts. For a different variation I will also add fresh basil next time as someone else suggested. Maybe 1 1/2 cup spinach and 1/4 cup basil. Otherwise it was perfect the way it was. So easy to make too. Thanks Giada. "
