We loved it. The first time I made it I overcooked it and didn't let it sit in the marinade after it was done so it didn't come out too good. Tried it again and it came out perfect. So tender and full of flavor. I also made sure to spoon some of the adobo sauce in the marinade and I chopped up the chipotle pepper too."

I only had zucchini, sweet onion and green pepper, so I just used what I had. The dressing gave it a good flavor. What's good about the dressing is you can just use it on any kind of grilled vegetable that you have. I grilled mine on the grill. Next time I am going to cook this recipe with rice to put the vegetable over it."

Loved this recipe. Great flavors with the lemon, spinach and toasted pine nuts. For a different variation I will also add fresh basil next time as someone else suggested. Maybe 1 1/2 cup spinach and 1/4 cup basil. Otherwise it was perfect the way it was. So easy to make too. Thanks Giada. "

My husband and I do not like mustard so I hesitated to try this recipe. I'm glad I read the reviews and seen that it had 5 stars so I tried the recipe. It didn't have that strong mustard taste and was just delicious. The mushrooms in the sauce with the chicken was just perfect. This was an easy recipe and a keeper in my recipe box. "

This recipe is deffinately a keeper. The roasted vegetables were so good that you could eat it just as a side dish if you wanted. The red peppers and sweet onions were nice and sweet with the mushrooms and zucchini. The roasted tomatoes popped open while cooking leaving the inside juice of the tomatoe to marinate over the other vegetable and pasta....
