J Roth - you would dry brine for the longer time (2-3 days), and then rinse, dry, and cook. Best of luck! I've made this recipe the last 2 years and it's great!

I thaw my turkey fully (or try to) before the "rubbing" process, and then proceed with the rest of the recipe. My turkey is 23lbs, so it needs 5 days to thaw. It has been in the fridge since Saturday, and I will rub it late Tues or sometime Wednesday.
