Reviewed Crab Risotto
"Are you kidding me?!!! This is divine risotto! And I am a frequent risotto-maker. Granted the white truffle oil was a tad expensive ... but worth every penny. I was able to use freshly picked, in-season crab. To kick it up, I gently sauted the crab in a little butter before adding it and added a cup of white wine after toasting the rice, cooked it down, then proceeded with the chicken stock.
Reviewed Orzo with Roasted Vegetables
"Dumb me. I should have pulled the oil down to less than 1/4 cup (not Ina's 1/3). My 911 recovery was to toss the orzo/veggie/dressing mixture into a collander to drain the excess oil for 5 minutes before serving. Very tasty. Served nicely with Giada's Chicken Milanese. Thanks Ina!

"Delicious. Per the other reviews, I bumped the garlic cloves up to 4 for more punch. NEXT TIME, I will replace Giada's beloved mascarpone with 1/3 cup of non-fat cream cheese. We're saving our arteries for dessert! Thanks Giada!
Reviewed Butternut Squash Risotto
"PUMPKIN risotto... replaced squash with 1 1/2 cups fresh pumpkin puree. 1/2 teaspoon fresh nutmeg. 1/2 teaspoon dry sage. Peeled and boiled 1/2 lb white pearl onions + 2 tablespoons butter. Added puree, nutmeg, sage, pearl onions in the last 3 minutes of cook time. Added cheese and served with roasted chicken breast and Ina's string beans with garlic. Perfect. Thanks Rachael for the idea!

"Excellent! Easy! Very delicate - not overwhelming - orange flavor. Enhances the flavor of the dish stars...broccoli and cauliflower! One recommended change >> back the b&c cook time off to 4 minutes for a more al dente crunch. Thanks Rachael!

"GREEN CHILE cornbread stuffing! Replaced red pepper with diced, fire-roasted green chiles. Replaced ham with mild turkey chorizo. Replaced cream with nonfat milk. Spectacular! Rave reviews from my typically very traditional family. It will now become a Thanksgiving "tradition" in our home! Thanks Michael!
Reviewed Pork Tenderloin Marinated in Garlic, Lemon and Oregano with Greek Salad
"My go-to "healthy" pork tenderloin recipe. (I omit the anchovy paste and substitute endive for radicchio.) All of the ingredients balance perfectly on the palate ... the grill/marinade flavor of the meat ....with the olives and cucumbers....with the grill flavor of the tomatoes and endive....with the tart/slightly sweet salad dressing. Nice with a big Zin. Thanks Bobby!
Reviewed Easy Sole Meuniere
"My GO-TO recipe for sole or any other white, delicate fish (e.g. Tilapia). Goes well with angel hair pasta. To change it up, thinly sliced button mushrooms are nice or add half a teaspoon of fresh-ground pepper. Yes, it's a little lemony -- but hey, that's what a great "Meuniere" is all about! Thanks Ina!
