After eating these, you will never go back to bagged marshmallows again. They are easy and delicious! I've made them several times now, and each time, it gets a little bit less messy. I recommend you give them a try and make them exactly as written. I made the regular size. I've never made the miniatures.

The texture was great, but this cornbread had absolutely no taste. I have loved every Ree Drummond recipe until I made this one. It was greasy and blah. However, the braised beef brisket (also a Pioneer Woman recipe) that I made with it was to die for.

I made this for a family gathering. Everyone loved it. I served the pies in 6 oz. ramekins. I had enough to make 15-16 pies. Like other reviewers, I tempered the eggs before adding them to the hot butter and sugar. I still had lots of curdling, but the strainer took care of that. I was surprised at how good this is! My husband loved it, too! I will be making it again and again. I recommend adding cilantro into the salsa, not just as a garnish. I used lots of it, but I love cilantro. Thanks for the great recipe, Chef Sanchez!

I used one 10oz. bag of frozen corn, instead of fresh. I put the frozen corn into the pan after sauteing the butter and shallots. It thawed quickly. The recipe was great! My family really liked the sweet and heat.
