Reviewed banana nut muffins

this was the better of several banana muffin recipes I have found. I substituted sweet sorghum flour for 1/2 the regular flour, and the brown sugar was replaced with 3/4 cup maple syrup. Muffin was light and airy, light consistency and lightly sweet.

I thought the recipe was good. I added chopped Bok Choy and scrambled in an egg for a little for texture and flavor. I would not advise this for a make ahead recipe. Will make again.

Excellent recipe. I used fresh pumpkin. To cut some calories, I baked the filling in a deep dish without crust. Serve Warm in a small dish. Yum!

Recipe was easy to make. I followed recipe, but instead of putting meat on skewers and refrigerating, I refrigerated seasoned meat separately and allowed skewers to soak. This cut down on prep time, as I was in a hurry, Sauce was delicious, and I served them in small pitas with tomatoes and feta cheese. Side dish was roasted rosemary potatoes....
