"The recipe in itself was good, not great. Some of the kale got overdone & bitter, some was still squishy, the pieces really cooked down to nothing. A couple things I changed to make my next batch better:
1. DO NOT WASH KALE (unless it really is dirty. Most of the time pulling the stem off got rid of any dirt. Plus, your oven is going to off "

Reviewed Chicken Enchiladas...white Sauce...rich!

"The sauce is five stars: easy, totally not authentic, but still really tasty. I've made it just as directed, and a healthier version using olive oil & light sour cream. Can't tell the difference.

Put some goodies in the enchiladas themselves, like bell peppers, corn, and black beans."

"These are interesting...hubs is on a low carb kick, so I figured I'd try them. There basically meringues. I think they could use some flavor, maybe either garlic powder or more artificial sweetener, depending on sweet or savory preference. Hubby enjoyed being able to eat a sandwich."

Hi! I'm Lauren. I have a culinary degree from 2003. I worked in the industry for several years as a bakery manager, line cook, wait-person, bartender, basically did everything except stick with it long enough to have my own restaurant. I currently cook only at home, but I make anything and everything. My hubby is also a culinary graduate, so you can imagine, we eat well. We're particularly interested in Asian cuisine, and enjoy experimenting with different taste combinations.
