Reviewed shrimp scampi with pesto couscous

Easy and tasty. I used olive oil because it's always on hand. The store where we shop frequently sells good brands at Buy One Get One Free, so it's just as affordable as canola.....and I never use the canned Parmesan - fresh always tastes better and is worth the extra cost.
