I have tried many recipes for cornbread, and finally found the one! I used Bob's Red Mill coarse cornmeal which gave it a great texture. I did find the butter to be a little bit heavy, so next time I will probably decrease to 6 tbsp. My hubby who is not a fan of cornbread has been converted!
