Reviewed "Instant" Pancake Mix

"These pancakes are heaven. I honestly think the best tip he gives you is to DON'T OVERMIX. For years I used to sit around, waiting for my pancakes to cook, and I'd decide that I should mix the batter more to make it smooth.... just don't. The pancakes are light and fluffy and delicious. I always 2/3 the recipe and then freeze the leftovers. Just thought I'd also say that it's hard to freeze blueberry pancakes, not that they don't freeze, but that it's hard to defrost the blueberries in the toaster without totally burning the pancakes. I'll have nice warm, toasted pancakes, but every other bite I get a hard, frozen blueberry in the middle. I would just say, if you're planning on freezing them, use either no add-ins or possibly chocolate chips, but just plan on eating them all at once if you're using fruit.

Reviewed Simple Syrup for Sweetening Tea

"Just a thought, do we really need a recipe for simple syrup?
Anyway, despite it's simplicity, simple syrup is very easy to make in large portions, and handy to have in the kitchen. I always keep a container of it in the Summer to sweeten iced tea as I almost always find myself endlessly stirring my tea, trying to get the sugar to dissolve.
