Reviewed Lemon Ricotta Cookies with Lemon Glaze

"These cookies are super delish!!!! I first made them this past Christmas as a lighter alternative to my other assortment of Christmas cookies. Everyone LOVED them. I just made another batch today, and cannot stop eating them. Yes, they are pretty cake-like in texture...and that's a problem, why??? Other reviewers are ranting about the texture as if cake is the worst thing ever! They have ricotta in them, making them moist, soft and fluffy, get over it. If you want a crispy crunchy cookie, look elsewhere, as these are soft and melt in your mouth. The lemon flavor is just right (I used the zest of 2 small lemons for both the cookies and the glaze today). I followed the recipe exactly, no modifications other than the zest, and they came out perfectly both times. I'm going to make them for my sister's upcoming baby shower - they are the perfect light lemony cookie for spring, or any time of year!"

"SO GOOD! Like some other reviewers I only used 2 sticks of butter and 2 cups powdered sugar for the frosting, and it made plenty. The cupcakes themselves were very easy to make and the end result was soft, fluffy, moist cake with a deep chocolate flavor. Awesome for St. Patrick's Day, or any other day you want a unique twist on your basic chocolate cupcake."
