Given the amount of sauce this makes, you can certainly stretch this recipe by using more pasta. And, with 9 ounces of cheese in the recipe, would you really want to only make 2 servings... that's way too rich of a dish for such large serving sizes. The addition of the espresso powder is off the charts fantastic. However, if you don't have espresso powder, you could grind instant coffee with a mortar and pestle and get the same flavor. I tend to use a bit more when using the powder than the recipe calls as my personal preference.""

Just fantastic. I think though that next time we'll skip the shrimp. We like shrimp, but it really didn't add much to the recipe with so much of the flavor coming from the sausage. Could not find the file at the grocery store and was fine without it. Many other recipes call for serving this with some rice which I think would be a nice addition.

The recipe itself worked fine, but the taste of the pears was too subtle for my taste. I will make this again with mixed berries or all apples.
