We watch Alton Brown regularly! We've enjoyed his recipes. And we do understand that not all recipes work out the first time. In this case we'll try it again. It wasn't quite as soft & tender as we hoped. But the meat had the texture of a nicely cooked steak. While not "fall-off-the-bone" tender, it was still tasty. The gravy (made without the olives...
