This is my go to banana bread recipe. I usually make it as written, but this time I made some modifications. I used coconut oil instead of butter (1:1 ratio), I used 1 cup AP flour & 1/2c of whole wheat pastry flour, Trader Joe's reduced fat sour cream, & lined my pan with parchment paper for easy removal.

This is a great way to use up left over pot roast. I already had onions, carrots, & garlic in my pot roast. I only had about a cup of frozen peas so I threw those in. We love this recipe. I always double the spices (unless you have kids in the house). Also, I only had 6 small boneless, skinless chicken breast & used those. I use one can of plum tomatoes, 1 can crushed tomatoes. This serves way more that six so we always have left overs for the next day.

My family enjoyed it. I only had Mexican shredded cheese so I used that & added a dash of cayenne to the mix. I did add some of the cheese to the egg mixture and then some on top. I will make again.
