I rated this a few years ago- based on following the recipe exactly. I still rate it a 5.This is definitely more "cake" like than most carrot cakes- not as dense- a bit lighter. It lends itself to making it your own easily if you want to take it a bit further.

As is, I'd rate it a 3. But using this as a base and making several I've come up with a 5!
Like others I use 2 T melted butter instead of oil, 1/3 c flour and 1/4 t baking powder and 4 T sugar... then in place of milk I use 3 T chocolate stout and add 1 T Scharffen Berger Bittersweet Baking Chunks and 1 T pecans.. DELISH!
