"I made it last night for two people. The puff pastry was sitting in my freezer (hint: dont let it thaw SO much that you can't unfold it...oops). It was thick, buttery and delicious."

"As already mentioned in the some other reviews, I added onion with the celery and used challah bread since I could only find a tiny brioche loaf (so I had mixed bread). It was very, very yummy and a hit! I didn't find there was too much stock, but again I had a bit more bread.

Reviewed Brie and Onion Puff

"I make this appetizer a lot actually with a layer of fruit preserves, but have never done a savory one. I will try this with the caramelized onions. As Claire said, the egg wash really helps. You can also do it with pie crust as well as puff pastry if you can't find it. Both work well - puff pastry is just more flaky.

Jesse, I agree with Lindsay. A water cracker would be an excellent choice. Sometimes the butter crackers are too much with the rich brie.
