This cake is great, but the recipe needs a few modifications. Here's what I did.
-used an immersion blender for cooked apples...much easier clean up
-mixed the sugars, egg, vanilla, apples separately and added 1/4 c oil, then stired into the sifted dry ingredients. I think this really helped the consistency.
