Reviewed Honey Cornbread Muffins

"This recipe has the right ingredient balance for airy muffins. First time, substituted maple syrup for honey (since I was out) and 2% milk; came out great. Next, did a vegetarian version (with eggs) substituted Bob's Old Mill 10 Grain Hot Cereal for cornmeal, substituted vanilla soy for milk, substituted coconut oil for butter. Very, very good! Thanks Neelys!"

"Non dairy version: used coconut oil to toast oats; cooked in rice cooker on porridge setting using vanilla soy milk instead of water. Added toasted coconut, cinnamon, nutmeg and whatever dried or fresh fruit I have on hand. Excellent!
