"I have been making meatloaf since I can remember, but certain ingredients in this recipe made this by far the best meatloaf night ever! Since it was what I had on hand, I used meatloaf mix instead of ground beef and I used Golden Mushroom soup instead of Cream of Mushroom, and I actually added the cheese to the meat mix rather than the sauce since I didn't read through the entire recipe first, but it was a good "oops". I'm not a fan of bell pepper so I did not use it but it was still perfect! I am making it again tonight by request! Oh, and the bread slices at the bottom of the pan to soak up the fat from the meat??? GENIUS!! I save my bread "heels" now simply for meatloaf night!
