I used up extra starter and the older blackened bananas! No waste, woo hoo! Wonderful banana bread, a most enjoyable breakfast for the family. I used part whole wheat flour and butter in the recipe. The only other change I might make next time would be to decrease the sugar by 1/4 cup or so. Thanks for sharing!"

We made too many baked sweet potato fries the evening before so I gave those a rough chop and used them in place of boiled potatoes. This also made the dish come together in no time. Everything else was kept the same and made a tasty breakfast when we topped the hash with fried eggs and served it up with a bottle of hot sauce at the table.
