I really liked these pancakes, although my family did not. I think the biggest thing for us was the amount of nutmeg. I think it compliments the lemon and ricotta very well but there is just way too much of it and it really overpowers the lemon. I would like to try these again with 1/4 tsp. ground nutmeg. I am pretty disappointed in these cookies. The taste is ok but the cookies were way to flat and flimsy and the filling was too runny. Big waste of time and ingredients. Maybe if you chilled the dough?
