This was amazing! I had a 3lb chicken...did it at 375F for the 1.5 hrs with foil tenting for 20 minutes after. It was great. I added red small potatoes (cut into fourths) and mushrooms to the vegetable mix and salted them a bit, which I don't think I needed to but they came out good regardless.
