Reviewed Glazed Chicken with Dried Fruit and Parsnips

"I've made this several times and love it. I do put a healthy spin on it using skinless chicken breast to help bring down the fat. I throw in the chopped chicken and let it soak up all the sauce. I've also used the both regular and low sugar apricot jam for it and I don't notice much difference. "

Reviewed Red Wine-Braised Beef Shanks with Mushrooms and Basil-Mashed Potatoes

"Awesome! Easy! Also added some leeks and shallots and I added three cups of wine, let it reduce a bit and then added a little more wine with the beef broth afterwards. Threw it in the oven after 2-3 hours on the stove for another 1.5-2 and the meat just fell off the bone! Served it over rosemary polenta with sauteed mushrooms folded in and a little bit of the gravy over the top.
