"This was a tasty, quick & easy side. I didn't have parsley, so I just added a little more fresh basil, which was fabulous. I also used balsamic vinegar instead of red wine vinegar, and my cheese was an "Italian blend" instead of just mozzarella. The dressing was subtle, but a great compliment to the rest of the ingredients. I'm looking forward to "
