Reviewed Shredded Chicken and Tomatillo Tacos with Queso Fresco
"It has everything I love in it, and using a chicken from the market makes it easy for me to make. I sit on a stool to get me to counter height, and the fact that this doesn't have many ingredients makes it all the better, since when I stand I get spasms in my lower back and legs. I have to do a lot of adapting with the MS controlling the amount of work I can do each day. This is wonderful, even though I can't use an outdoor grill. I have one that fits over 2 burners and that works well."
About Me
I am a senior citizen living with MS. I love to scrapbook, cook, read and crochet. I also love taking long walks when the weather is cool, because MS and heat do not mix well. Naturally, that makes spring and autumn my favorite times of the year, although I don't mind winter as long as we don't have ice and snow. I also have a stint in my heart, and would love to see some recipes that are easy to fix, and absolutely delicious. I love Mexican food and make a great 5 alarm chili that no one eats but me. I live in a senior living apartment building that is the tallest building in town. You may laugh about this, but it is 18 stories tall, since they left out the 13th floor. I'm still trying to figure out how my cat got out of my apartment, got on the elevator, and went down to the 12th floor. I live on the 16th floor, in a very small apartment, and love it. I have the best seat in town for the fireworks on the 4th of July.
