My Activity

Reviewed Creamy Chicken and Pasta Salad

"This was great, but I made a few changes that I will keep next time. It only needed 1/2 of that dressing, which cut the calories in half too. And I served it with the salad on the side, rather than under it, topped with cherry tomatoes, a few toasted almonds, and a little of the pasta's dressing. The combo was pretty as well as tasty -- the sal"

"Excellent. Only made 2 subs: cinnamon for nutmeg and Panko for fresh breadcrumbs. True keeper. "

Reviewed 7-Layer Pasta Salad

"Made for a 4th of July party and it was a hit. Excellent flavors. I used diced smoked turkey but otherwise followed the recipe exactly. Definitely a keeper. I assembled all but the lettuce and tomatoes the night before and added the salad part at the last minute--good idea. Beautiful recipe. Also as a side dish, it probably serves about 15 people. "

Reviewed Ham, Swiss and Apple Wraps

"This was excellent! I made it for a picnic and it traveled well. Next time, I'm going to leave out the olive oil in the dressing because it tasted fantastic without it. Reviewed Roast Pork With Creamy Peas

"Amazing!! Made this for Easter lunch. I only did a few things differently: I did not wash off the rub (why would you wash off that yummy rub??) and I pureed the peas in a food processor with half the cream (I used half and half) and half the butter. I am keeping both changes; searing the pork in a nonstick meant the brown sugar didn't burn at all""

Reviewed Chile-Chicken Posole

"This was an excellent winter soup/stew. I made the prep really easy by pureeing all of the veggies (except the hominy) -- skipping the saute -- and putting everything in a crock pot on low for 10 hours. I also added 2 bone-in chicken breasts, which were very affordable, and shredded the meat at the end of the cooking process. Healthy, delicious, ""

"Excellent! I'll be making this again. I think next time I'll add some cayenne to give it a kick.""

Reviewed Goat Cheese, Lentil and Brown Rice Rolls

"Excellent recipe! I changed just a few small things to add flavor: I cooked long grain (not quick cooking -- too bland brown rice in the rice cooker with 1/2 water and 1/2 chicken broth (I'm not a vegetarian and a packet of sazon by Goya that I had left over. It turned the rice a beautiful orange and gave it a kick. I made the lentils with a broth""
