This is by far one of my favorite recipes on Food Network! I've made this recipe so many times; it's simple but oh so good! I definitely recommend roasting the asparagus instead of blanching it. Simply toss with a little olive oil, S&P and roast at 375 for 8-10 min (till tender but not too soft). You can also use white wine instead of champagne. T"
