Loved this. I added some anchovy paste to the dressing to give it an extra something. Nicoise salad is one of my favs, its a full meal in its self. I cook all the ingredients so I have them on hand in the fridge to be able to pull the salad together a few times a week.

Yum!!! Had a craving for meatloaf today and this totally satisfied my craving. Minor modifications, used only 1/2 an onion (chopped really small) and added 2 tbsp of brown sugar to the meat mixture (per my dad's direction). I had to stop myself from having a second helping. Yummy! This was my first time trying quinoa and am now in love. I modified it slightly based on what I had in my pantry. Almond slices rather than pine nuts, dried cranberries rather than cherries, and lime rather than grapefruit. I couldn't stop eating it, it was crunchy and very flavorful. I can't wait to make it again.
