Delish! Annual tradition in our house! I use a rolling pizza cutter to make the cutting easier... AND no need to crack an egg at the end... use milk wash to adhere the cinnamon sugar to the cookie prior to baking!! I also raise the temp to 375 and bake a few extra minutes to "tan" the cookie to the correct doneness.""

We live in the middle of the country also, where it is very hard to find fresh scallops. Used flash frozen sea scallops from Costco. Placed it in a ziploc bag and thawed it under cold water as instructed... patted it dry and proceeded with recipe (except kept them whole). Quick and delicious on a weeknight. Served it with couscous and asparagus....
