I have been searching for years for the perfect red velvet recipe... and this is it! The batter is so easy to work with, and makes a very very moist cake. I did cupcakes - this made 12 regular sized and 24 minis. I like that the recipe uses butter in stead of oil. Don't worry about the amount of salt - it's perfect. Thanks for the amazing recipe!"

Yes... I do think there was too much mayo and too much salt. HOWEVER, I do love this recipe & I just made the changes to suit me. On special occasions, I top the remoulade with cooked lobster tossed with a wee bit of the sauce. Making this again for Christmas, when I excuse myself from "low fat" and "diet. I will be getting back on the wagon January...
