About Me
I come from a family of great cooks, some of them in the profession, so the bar has been set pretty high when I invite them for dinner! I have made these eggplants but used roasted pepers (in EVOO and garlic) to top them with. Excellent, however I will certainly try this topping, as it looks excellent! Eggplant is a wonderful veggie.
