Rub the scallops with the tomato mixture? I certainly would not eat this from anyone who did that. Olive oil in the mixture insures that NONE will stick to the scallop. Spreading a bit in the laid-out prosciutto before wrapping it works, but it does NOT work if you follow the recipe.
