My Activity

Reviewed Paul's Grilled Grouper

"I love Emeril, however, this grouper recipe just seemed to lack flavor. Sorry, Emeril. "

Reviewed Champagne-Poached Salmon

"This is a delicious way to poach salmon, thanks Emeril. My Salmon took about 5 minutes longer to cook. Flaky, delicious with an understated lovely favor. Prosecco subbed nicely for Champagne. "

Reviewed Marinated Chicken Breasts

"This is a super-good, solid recipe. As others suggested, I pounded the breasts to about 1/2 in thickness. I used aged balsamic for the vinegar, and skipped the freezing step. After marinating for 3-ish hours, I cooked the breasts on the George Forman grill. I collected the "drippings" and made a sauce, adding a pat of butter, 1/4-1/2 c of Chardon"

Reviewed Pork Satay

"This is an excellent dish! Great flavors and tender. I cooked the skewers on the George Forman grill. The sauce is wonderful too. What a nice alternative to herb rubbed and roasted pork tenderloin. Thanks, Bobby!"

Reviewed Pork Chops Stewed with Apples and Prunes, with Mashed Sweet Potatoes

"These are the best pork chops ever! I was a little intimidated by the ingredients and did not have several on hand, but I forged ahead and WOW! I would have seconds but I'm trying to be good. Here are the substitutions that worked fine for me: instead of Brandy, I used Grand Marnier; instead of prunes, I used regular raisins; instead of heavy crea"

Reviewed Italian Wedding Soup

"I heart this soup. It's a little time consuming to roll all the tiny meatballs, but so delicious, it's worth it. I usually add frozen spinach, instead of (I believe, but not 100% sure) kale (?) that giada suggests. Give this a try! You won't be sorry!!!!"

Reviewed Pork Tenderloin with Seasoned Rub

"easy, simple, flavorful, and forgiving. You can substitute herbs if you don't have the correct ones on hand. I will make this again today and use butter with the olive oil to saute the garlic, as my garlic burned slightly last time. Super tender. My family loves it!"

Reviewed Beef Short Ribs

"I'm rating this as "good" because of the amazing aroma. Liked: aroma, vegetables Disliked: meat was still tough after cooking in dutch oven for 2 hours, ratio of veggies to meat was wayyyy too high; too much meat broth; kinda sad that I spent 3+ hours on this disappointing dish. Will probably continue to make my short ribs in the crock pot. "
