Reviewed Grilled Red Pepper-Tomato Sauce

Jul 4, 2013 in Food Network Community Toolbox on FoodNetwork.com

I absolutely love this sauce. Whenever I grill, I make a batch of this and serve it with crostini. I modify the herb (cilantro) to go with my menu (so occasionally toss in fresh basil or mint instead of cilantro). Hands down one of my favorite, go-to appetizers! Also great with fresh mozzarella!"

This dish IS expensive and somewhat time consuming, but when you love cooking - no one cares about spending 3 hours in the kitchen. This is a delight and unusual mix of flavors; creamy, cheesy, earthy and hearty! Fantastic!"

Reviewed Lentil Soup with Chili Oil: Zuppa di Lenticchie

Delicious - with and without the chili oil! I didn't use nearly as much oil as it called for and I used vegetable broth instead of chicken, and I used red lentils because it's what I had on hand. And the recipe is super healthy - what's not to love?!""

Mario did it again. A quick, tasty, unique dish that sends you to a bistro in Sicily. Delish!
As for the person who wrote the initial review - it is not the chef's job to give you substitutions for every ingredient or to educate you on each ingredient. But if you choose to be lazy, I can tell you that caciocavallo is a sicilian mozzarell...

Reviewed Abruzzo Style Dumplings: Gnocchi di Semolina all'Abruzzo

Aug 8, 2011 in Food Network Community Toolbox on FoodNetwork.com

This is a delicious and simple dish, lovely as a side or first course. However, on the show, Mario did not layer it with butter. He lined the pan with the gnocchi, sprinkled it with cheese, and drizzled it with olive oil before baking it. This is how I made it - and it was very enjoyable.""
