Made this tonight for dinner and it did not disappoint! I too thought it looked a bit thin while still simmering but I turned the stove and let it sit for about 20 mins and it seemed to thicken. Adding chips and cheese really helped to make it creamy. Definitely a keeper.

This soup is so very good and so easy to make. I made it for my 3 sick toddlers, husband and father in law. All loved and actually felt better afterwards. I add more stock (about 52 ounces) and added frozen southern style corn (corn, red peppers) instead of carrots. This recipe is definitely a keeper and will be made again and again. Tyler always "
