"What can I say? This is my favourite type of recipe: easy, nutritious, seasonal, DELICIOUS! Loved it and will definitely be making it again (--next weekend, in fact. I was tempted to sear the pork in a cast-iron pan on top of the stove, but decided to do the recipe just as directed. No need to sear--the roast was lovely.

"Having read other reviews, I altered some things on my first try of this recipe. I added the tofu along with the onion at the very beginning, so it wold crisp up a little bit. I also added double the curry powder, as well as an additional tsp. of cumin. I had no jalapeno peppers, so I substituted a tsp. of sambal oelek (Indonesian chlil sauce). Oh""

"This was delish! My sirloin tip roast was a little tough, so I might try a different cut next time. The sauce with its rich layers of flavour really makes this dish!
*** For great LEFTOVERS, use the extra drippings (1/4 cup) and leftover sauce (1/2 cup) along with a couple cups of the chopped roast to make Emeril's Roast Beef Pastitsio. Highly recommended!

"My husband generally only likes chicken that is overcooked, which means that I usually bake chicken till it is dried out. He loved this dish! I made it with chicken legs, baking for 30 minutes at 450 and then only 30 minutes at 350. It was delicious and suited us both! I will definitely make this again!
