This was PERFECT! I did this for Christmas lunch/dinner and it was awesome. I added thyme springs to the rosemary (becauase I'm a thyme fiend) and it was great. The beef ribs used as the baking rack were my "chef's treat" before dinner, and I thought that the ribs were worth all the prep and cooking alone. My six-year-old daughter ate one rib "
